THOTAKURA MANGO ROTI PACHADI - Amaranth leaves Mango Chutney

Friends.. we all know that leafy vegetables are very healthy for us. However you take they provide us enormous health benefits. And one of such easily available leafy vegetable is "Amaranth". It is called as Thotakura in Telugu. Thotakura is highly rich in vitamins and minerals. Thotakura is a regularly used leafy vegetable in Telugu Kitchens that is used to prepare various dishes like Dal, curry and Stir Fry. And in my home we too use this to prepare Thotakura Pappu and Thotakura Fry. 

Today, I bought Raw mangoes and found thotakura in my kitchen. So, thought of making some innovative tasty recipe using these two. 

Friends.. let's enter my kitchen to prepare a tongue tickling "Roti Pachadi" (Chutney made using pestle mortar) using Thotakura and Raw mango. To make this delicious pachadi more tasty, I have prepared a masala by dry roasting Sesame Seeds and Jeera. Then sauteed few onions, green chillies, raw mango pieces and thotakura leaves. Also added garlic cloves and cooked for 10 min. Later ground dry roasted sesame seeds in pestle mortar and added cooked amaranth mango mixture and ground to make Pachadi. Thotakura Mango Roti Pachadi is ready to taste now. 

My innovative recipe has comeout very tasty. Hot rice, dal and pachadi with a dollop of ghee.. wow.. what a combination...!!! I swear friends... this is the best accompaniment for your lunch and dinner. You can even try with Roti or Chapathi.

INGREDIENTS : 
2 tsp Sesame Seeds
1/2 tsp Jeera
1 Ladle Oil
1/2 cup Onion
5-6 Green Chillies
1 cup Raw Mango
1 bowl Thotakura / Amaranth Leaves
1 tsp Salt
10 Garlic cloves
Few Coriander leaves.

METHOD : 
1) Add sesame seeds and jeera to a pan and dry roast them well. 
2) Take out and keep them aside. 
3) Add oil to the pan. 
4) When heated, add onion, green chillies, raw mango pieces, thotakura and salt. Mix well and cook for 5 min. 
5) Add 10 garlic cloves and mix well. Cook again for 5 min. 
6) Add coriander leaves. 
7) Mix well and keep aside. 
8) Take a pestle mortar.
9) Add dry roasted Sesame seeds and jeera. Grind well to make powder. 
10) Now add cooked amaranth and mango mixture and grind again to make Pachadi. 
11) Thotakura Mango Roti Pachadi is ready to taste now.
12) Enjoy.
