ALLAM MURABBA / GINGER BRITTLE - My Grandma's Village Style

ALLAM MURABBA is an Ayurvedic preparation made using ginger, sugar, lemon and little salt. It is the best home remedy for indigestion, bloating stomach, vomiting, cold and caugh. In my childhood, I have seen my grandma taking a piece of "Allam Murabba" every morning on empty stomach.  I have learned this recipe from my grandma and sharing with you all today. Its very simple and easy to prepare.

INGREDIENTS : 
1/2 cup Ginger
1 cup Sugar
Little Water
1/2 tsp Lemon Juice
Pinch of Salt
Little Butter / Ghee

METHOD : 
1) Take Ginger, peel off the skin and cut into pieces.
2) Add to mixie and grind to make fine paste.
3) Now take a pan, add little water and melt it to make syrup.
4) Keep stirring till the surgar syrup gets one string consistency.
5) Add lemon juice, little salt and mix once.
6) Now add ginger paste and continue stirring till the mixture gets thick.
7) Take a small plate and grease it with ghee / butter.
8) Place the ginger mixture on greased plate and let it cool.
9) When it gets cool and dry, cut into small pieces.
10) Store in an airtight container and eat a piece every morning on an empty stomach. 
11) Its very healthy for all.

INSTANT PANDU MIRCHI PACHADI / RED CHILLI PICKLE - Rayalaseema Village Style

Rayalaseema is renowned for its hot and spicy dishes, village style cooking and tasty cuisine.  I am sharing one more Ralayaseema village recipe with you all today "INSTANT PANDU MIRCHI PACHADI". It is an instant chutney can be made easily, quickly, prepared using fresh red chillies. In our Rayalasema, we call this spicy chutney as "Korivi Kaaram". 

Check out the ingredients list and try out today and enjoy the taste of this village style, super hot, tangy, spicy "PANDU MIRCHI PACHADI". Tastes super with hot rice & dal, roti. If you love very hot and spicy taste, you can even spread it on top of Dosa also. Happy Cooking...!

INGREDIENTS : 
For Dry Roast : 
3/4 tsp Jeera
1 tsp Mustard Seeds 
1/4 tsp Fenugreed seeds

For Pachadi : 
1.5 ladle oil 
2 cups Red chillies - chopped
Tamarind - small lemon sized
7 Garlic cloves
1 tsp Mustard seeds
1/2 tsp Jeera
1/2 tsp Urad Dal
1/2 tsp Chana Dal
Curry Leaves
Little Asafoetida
Little Sugar
Salt to taste

METHOD : 
1) Take a pan, add little jeera, mustard seeds and few fenugreek seeds. 
2) Dry roast well and grind to make fine powder.
3) Take another pan, add chopped red chillies in hot oil, fry once.
4) Add little tamarind, few garlic cloves and fry for 10 minutes till red chillies leave the fresh flavour.
5) Take out into a mixie. Add salt to taste and grind to make paste. Keep aside and proceed to prepare Tadka.
6) Now in add oil to the pan, add mustard seeds, jeera, urad dal, chana dal and saute.
7) Add few curry leaves, little asafoetida and saute again.
8) Now add ground red chilli paste and mix.
9) Keep stirring and fry for 5 minutes.
10) Finally add little sugar and fry again.
11) Dish out and store in an air tight container.
12) Store in refrigerator to use for a week.
13) Enjoy the taste of Rayalaseema style INSTANT RED CHILLI CHUTNEY.

CHINESE CHILLI CORN FRIED RICE

Friends... today I am presenting a simple, easy and quick to make rice recipe "Chinese Chilli Corn Fried Rice" prepared using all available ingredients in the kitchen. INGREDIENTS :
1 Ladle Oil
1 tbsp Chopped Onion
1 tbsp Chopped Garlic
1/4 cup Capsicum
1/4 cup Red Chilli 
1 cup Boiled Sweet Corn
2 tsp Soya Sauce
2 tsp Tomato Ketchup
Little Red Chilli Powder
1 cup Corn Starch
Little water
1 Bowl Cooked Rice
Coriander leaves
Spring Onion
1 tsp Black Pepper Powder
1 tsp White Vinegar
Salt to taste 

METHOD : 
1) Heat oil in a Pan.
2) Add finely chopped Onion, garlic and saute.
3) Add capsicum and red chilli. Mix once.
4) Now add a cup of boiled Sweet corn, soya sauce, tomato ketchup, little salt and red chilli powder and saute.
5) Add Corn starch, little water and keep on mixing.
6) Add cooked rice and mix well till all the mixture coats well with rice.
7) Sprinkle coriander leaves, spring onions, little black pepper powder, a spoon of vinegar and saute for a minute again.
8) Dish out and serve when hot. 
9) Enjoy the taste of "Chinese Chilli Sweet Corn Fried Rice".

INSTANT MANGO THOKKU - Spicy, tasty Pickle

Summer has started and the season for mangoes also started. We, Telugus prepare variety of pickles with mangoes. Mango Pickle is the best accompaniment for your lunch and dinner as well. Mango Pickle when eaten with hot rice and a dollop of ghee... no words to describe the divine taste...! Just mouth watering...!   

Now.. let me share a tongue tickling, spicy, tangy pickle made with mangoes "INSTANT MANGO THOKKU". It can be prepared easily, very quickly and can be preserved for a week by placing in air tight containter and storing in refrigerator.  Why to wait friends... Check out the ingredients list. INGREDIENTS : 
1 cup Mango Pieces
Salt to taste
2 Garlic Cloves
1 Ladle Oil
1/2 tsp Mustard seeds
1/2 tsp Jeera
1/2 tsp Urad Dal
1/2 tsp Chana Dal
1/4 tsp Fenugreek seeds
2 Dry Red Chillies
Little Asafoetida
1/2 tsp Ginger Garlic Paste
1/2 tsp Jeera Powder
1 tsp Red Chilli Powder

METHOD : 
1) Take a mixie, add a cup of mango pieces. 
2) Add little salt and garlic cloves. 
3) Grind coarsely to make "Mango Thokku".
4) In a pan, heat oil.
5) Add mustard seeds, jeera, urad dal, chana dal and fenu greek seeds.
6) Saute and add dried red chillies, curry leaves and little asafoetida.
7) Fry well.
8) Add Mango Thokku, Mix once.
9) Now add ginger garlic paste, jeera powder, red chilli powder.
10) Mix well and saute for 2-3 minutes till the raw flavour goes from mangoes.
11) Take out and place in an air tight container.
12) Can preserve for a week by keeping in refrigerator.
13) Enjoy the taste of spicy, tangy Mango Thokkku now.
