THOTAKURA MANGO ROTI PACHADI - Amaranth leaves Mango Chutney

Friends.. we all know that leafy vegetables are very healthy for us. However you take they provide us enormous health benefits. And one of such easily available leafy vegetable is "Amaranth". It is called as Thotakura in Telugu. Thotakura is highly rich in vitamins and minerals. Thotakura is a regularly used leafy vegetable in Telugu Kitchens that is used to prepare various dishes like Dal, curry and Stir Fry. And in my home we too use this to prepare Thotakura Pappu and Thotakura Fry. 

Today, I bought Raw mangoes and found thotakura in my kitchen. So, thought of making some innovative tasty recipe using these two. 

Friends.. let's enter my kitchen to prepare a tongue tickling "Roti Pachadi" (Chutney made using pestle mortar) using Thotakura and Raw mango. To make this delicious pachadi more tasty, I have prepared a masala by dry roasting Sesame Seeds and Jeera. Then sauteed few onions, green chillies, raw mango pieces and thotakura leaves. Also added garlic cloves and cooked for 10 min. Later ground dry roasted sesame seeds in pestle mortar and added cooked amaranth mango mixture and ground to make Pachadi. Thotakura Mango Roti Pachadi is ready to taste now. 

My innovative recipe has comeout very tasty. Hot rice, dal and pachadi with a dollop of ghee.. wow.. what a combination...!!! I swear friends... this is the best accompaniment for your lunch and dinner. You can even try with Roti or Chapathi. 

Come on.. try making this innovative Thotakura Mango Roti Pachadi today...! Happy Cooking...!

INGREDIENTS : 
2 tsp Sesame Seeds
1/2 tsp Jeera
1 Ladle Oil
1/2 cup Onion
5-6 Green Chillies
1 cup Raw Mango
1 bowl Thotakura / Amaranth Leaves
1 tsp Salt
10 Garlic cloves
Few Coriander leaves.

METHOD : 
1) Add sesame seeds and jeera to a pan and dry roast them well. 
2) Take out and keep them aside. 
3) Add oil to the pan. 
4) When heated, add onion, green chillies, raw mango pieces, thotakura and salt. Mix well and cook for 5 min. 
5) Add 10 garlic cloves and mix well. Cook again for 5 min. 
6) Add coriander leaves. 
7) Mix well and keep aside. 
8) Take a pestle mortar.
9) Add dry roasted Sesame seeds and jeera. Grind well to make powder. 
10) Now add cooked amaranth and mango mixture and grind again to make Pachadi. 
11) Thotakura Mango Roti Pachadi is ready to taste now.

Friends.. today let me share a very famous Fry recipe that is a must item in Andhra Thali in all Andhra Hotels. As you all know that Andhra Cuisine is very famous for its meals and you can find Special Andhra Meals across the country and in many other countries. Whether it is a Mess or a Hotel, CARROT CABBAGE FRY is the must served Fry recipe in the menu. 

As this CARROT CABBAGE FRY is very tasty, delicious and is a very favourite recipe for Andhra Meals lovers, today I am presenting this very simple, easy recipe for you all. And it even gets ready in just 10 minutes. 

Why so late friends, check out the recipe making video, follow step by step photos and prepare CARROT CABBAGE FRY today...! It tastes best along with meals and even tastes good with roti, chapathi. You can also use as a stuffing for a Veg Roll / Samosa or just keep this awesome fry in the middle of the roti, roll and give it to your kids. I am sure you all will love this CARROT CABBAGE FRY. INGREDIENTS :
1 Ladle Oil
3/4 tsp Mustard Seeds
1/2 tsp Jeera
1 tsp Urad Dal
1 tsp Chana Dal
8-9 Garlic Cloves
2 Dried Red Chillies
Few Curry Leaves
1/4 cup Onion
2-3 Green Chillies
1 cup Cabbage 
1 cup Carrot 
Salt to taste
Little Turmeric Powder
1 cup Grated Fresh Coconut
1 tsp Lemon Juice
Few Coriander Leaves

METHOD : 
1) Take a Pan and add oil. 
2) When it gets heat, add mustard seeds, jeera, urad dal and chana dal. Saute well.
3) Add garlic cloves, dried Red chillies, few curry leaves and saute again.
4) Add chopped onions, long slit green chillies. Mix well and saute.
5) Add long cut cabbage and long cut carrot pieces. Mix well and fry for 5 min. 
6) Add salt to taste and little turmeric powder. Mix well. 
7) After 5 minutes, add grated fresh coconut. Mix well and fry again for 5 min. 
8) Finally add lemon juice, mix once and dish out.
9) Tasty, delicious Andhra Hotel Style "CARROT CABBAGE FRY" is ready to taste now.

MANGO RICE PUDDING - Creamy, yummy sweet

Hot Summer started..! But School holidays, yummy mangoes from our village bring lot of happiness.  For kids - its time for enjoyment to our kids and for me - its  time for cooking lot of variety dishes for them.  Now my house is full of mangoes. So, thought of cooking some different, delicious, yummy sweet dish using these mangoes at home today. 

Lets enter my kitchen and see how to prepare "MANGO RICE PUDDING". Its very simple and easy to make. I have taken cooked rice and sauteed it in ghee, later cooked again in milk. Then added fully ripe mango pieces and cooked again. Finally added sugar and cooked till gets thick. All these ingredients brought a creamy texture and authentic flavour to this recipe.

INGREDIENTS :
2 tsp Ghee
Cashew nuts
1 cup Cooked Rice
2 cups Boiled Milk
1.5 cups Mango Pieces
1 cup Sugar
1/4 tsp Ilaichi Powder

METHOD :
1) In a pan, add ghee and roast cashew nuts and keep aside.
2) Add cooked rice to the same pan and saute for a minute.
3) Add milk, mix well and cook for 10 minutes covering the lid. Cook till all the milk gets combines with rice.
4) Add mango pieces, mix well and cook again for 10 minutes.
5) Add little ilaichi powder and mix well.
6) Finally add sugar, mix well and cook finally for 10 minutes more. 
7) When all the ingredients are combined well with rice, the pudding gets creamy texture and authentic flavour.
8) MANGO RICE PUDDING is ready to taste now. 
9) Tastes super when hot and even when its cool.

Traditional, healthy and tasty "UGADI PACHADI" in Telangana Style

The Celebrations of Ugadi are same in all the regions of Telugu States. The ingredients used for making UGADI PACHADI are same in all the regions, but the making styles are different to each other. In Telangana also the same "Shadruchulu", the six tastes are added to the Pachadi by using neem flowers, tamarind, jaggery, red chilli powder and raw mango. 

Telangana people love and follow the rural culture and traditions. Each and every festival in Telangana brings life to the rural traditions. So on the auspicious day of Ugadi also, people of Telangana prepare Ugadi Pachadi in a new earthen pot. The consistency of Pachadi is very loose, mostly like a juice that makes it very healthy drink in hot summer. Combination of jaggery and salt prevents thirst and ajwain is very good for digestion. 

From this auspicious day "Ugadi", people of Telangana start using Earthen Pot to drink water which a natural way of cooling water. 

Follow the recipe and celebrate this Ugadi with this traditional, healthy and tasty Ugadi Pachadi in Telangana style.  Happy Ugadi to all of you... Enjoy...!

INGREDIENTS : 
1 cup Tamarind Juice
2 cups Water
1/2 cup Jaggery
1/4 cup Raw Mango pieces
1/2 tsp Ajwain / Oma
Little Red chilli powder
Few Neem flowers
Little Rock Salt

METHOD : 
1) Take a earthen pot and add tamarind juice and add 2 cups of water to make it loose.
2) Add jaggery, raw mango pieces, ajwain, red chilli powder, neem flowers and rock salt.
3) Mix well using your hand. 
4) Ugadi Pachadi is now ready to offer to God as Naivedyam and have this traditional prasadam after pooja.
5) Enjoy the festival with this healthy, traditional, tasty "Ugadi Pachadi" in Telangana style.
