PEPPER RICE

In these busy days, we all love to cook something that is fast to cook, easy to prepare with available ingredients in the kitchen. Fried Rice is one such best option that can be made very quick, healthy and nutritious in just 10 minutes. We can make different styles of fried rice in different tastes using various ingredients. I have prepared Carrot Sweetcorn Fried Rice earlier and today I am presenting a grandma's recipe "PEPPER RICE". In olden days, this healthy rice is used in curing stomach & throat ailments and it is also the best remedy for cold and cough. 

Black pepper is one of the ancient, humble and healthy spice of India with pungent and woody aroma. The use of black pepper in Indian kitchen especially south Indian kitchen is limitless.   

Let me come to my Pepper Rice now... I have taken the olden days' recipe and gave small twist in taste by adding bell peppers and garam masala. Bell peppers made this recipe more colourful and garam masala added a good flavour. Add ginger, garlic to the oil. After sauteing them, add red & green bell peppers and all other ingredients. Stir fry them and add cooked rice. Add black pepper powder to rice at the end of cooking because if cooked longer, it looses its flavour and aroma. Finally sprinkle coriander leaves and add lemon juice. Mix well till the sharp flavour of pepper and other ingredients are nicely blended with rice. 

Try to prepare this healthy Pepper Rice often, especially in winter season because it relieves cold & blocked nasal passages, stimulates digestion, enables weight loss and acts as a great exfoliator that enables blood circulation and provides skin with more oxygen when taken with honey / curd / fresh cream.

INGREDIENTS : 
1 ladle Oil
1 tsp Garlic
1 tsp Ginger
1/2 cup Red bell pepper
1/2 cup Green bell pepper
Few curry leaves
1/4 cup onion
1 pinch Red chilly powder
1/2 tsp Salt
1 cup cooked rice
3/4 tsp Black pepper powder
1/4 Garam masala
Few Coriander leaves
1 tsp Lemon juice

METHOD : 
1) Add a ladle oil to pan.
2) Add garlic and ginger. Saute them.
3) Add red bell pepper & green bell pepper, few curry leaves.
4) Add onion, red chilly powder, salt and mix well.
5) After stir frying all the ingredients, add a cup of cooked rice.
6) Add black pepper powder, few coriander leaves and a spoon lemon juice.
7) Cook for 3 more minutes and dish out.
8) Enjoy the taste of PEPPER RICE.

Tips : 
1) Add pepper powder at the end, if cooked longer it looses its aroma and flavour.
2) Cool the cooked rice and add to avoid sticking.

MASALA PEANUTS - Tea Time Snack

Peanuts are excellent source of nutrients, omega3, fiber and antioxidants. Whether the intake is in the form of peanut butter, handful of roasted peanuts or added in masalas, peanuts pack a serious nutritional punch that gives you many health benefits. So, try to include at least half a handful peanuts (about 15 grams) daily, to keep you away from many diseases.

MASALA PEANUTS is a simple, quick and very easy, evening tea time snack liked by all age groups. Since my childhood, I am crazy after snack food. Whether it is mirchi bajji, kara boondi or masala palli (peanuts), I love the taste of crispy, crunchy, spicy snack. We had peanut crops in our village, so there was all time availability of peanuts in our home, and my mom made the habit of using them in various ways in her recipes. One of the best and tastiest peanut recipe made by mom is Masala Peanuts. I am a bit addicted to this tasty snack.

As a weekend special, today I am presenting my mom's recipe as it is, but for additional taste, I have added garam masala and chat masala. Mixed all the ingredients with peanuts by adding little water. See that the mixture is just coated with all peanuts. Do not add more water. After that deep fry these coated peanuts on low flame till they get crisp and golden brown. Take out and eat when they get cool.

INGREDIENTS : 
1 cup Peanuts
1 tsp Maida
1 tsp Rice flour
1 tsp Besan
1/2 tsp Red Chilly powder
1/4 tsp Turmeric powder
1/2 tsp Chat Masala
1/4 tsp Garam Masala
1/4 tsp Dhaniya powder
Salt to taste
Little Water
Oil for deep fry

METHOD : 
1) In a bowl take a cup of peanuts.
2) Add maida, rice flour, besan, red chilly powder, turmeric powder, chat masala, garam masala, dhaniya powder and salt to taste.
3) Mix once.
4) Now add little water and mix all the ingredients well. 
5) See that all the mixture is well coated to peanuts.
6) In a pan, heat oil for deep fry.
7) Slowly add coated peanuts to oil.
8) Fry on low flame by stirring constantly.
9) Take out when they get crisp and golden brown.
10) Serve when Masala Peanuts get cool. 

Note :
1) For crispiness I have added Rice flour. 
2) You can replace rice flour with corn flour.
3) Do not add more water. 
4) Keep the mixture in thick consistency only, else they will get crisp.

BANDARU LADDU / TOKKUDU LADDU

Andhra is the mother land of many awesome delicacies. Typical Andhra cuisine has many special signature recipes for pickles, sweets, veg and non-veg curries. I have studied my Intermediate in A.P. Residential Junior College in Nimmakuru, Krishna district and stayed there for two years. So, I have tasted many of these wonderful dishes, but not tried to learn how to make them. I remember whenever we go home for holidays, we all used to buy the some authentic sweets from a famous sweet shop in Vijayawada bus stand. Happy to recollect all the beautiful memories. 

One of the most popular, traditional and delicious dessert from Andhra is Bandaru Laddu. It is also called as Tokkudu Laddu made with gramflour and the making process is entirely different from regular boondi laddu which brings a big difference in taste also.

When I participated in TV 9 Chef No.1 reality Cookery Contest, our Chef gave the task of making Bandaru Laddu in quarter finals. Only 4 contestants were in the game that time and only one of us was able to describe the right process of making bandaru laddu. I know the taste but don't know the making of it. Chef gave us the complete recipe, asked us follow and make at least 4 laddus that are identical in shape, should not go away from original flavour , colour and texture. For the first time in life, I tried doing them, finished with same taste, but missed the texture and colour. My laddus got crumbled when I presented them at Chef's table. My product was better than other 3 contestants, so moved on to Semi finals in that Contest. 

With this learning experience, today I am presenting and sharing the recipe of BANDARU LADDU with you all. I have made a tight dough with Besan (gram flour), made chaklis and deep fried them in oil till they get golden yellow. Later after cooling, I crushed the chaklis and ground to make a fine powder. This powder later cooked in Sugar Syrup. It smells delicious when cooking in sugar syrup. Made small balls with this mixture in desirable size. Delicious Bandaru Laddus got ready. Thanks to Chef Sudhakar No.Rao for making us to learn this wonderful recipe at TV9 Chef No.1 contest. This time my Bandaru Laddus successfully reached all  parameters told by Chef.

INGREDIENTS : 
1 cup Besan (Gram flour)
1 tsp Oil
Water to mix
3/4 cup Sugar
1/4 cup water

METHOD :
1) In a bowl, add besan and oil.
2) Add water, mix well and make tight dough. 
3) Take Chakli maker, choose perforated plate with a medium size holes. 
4) Now place the dough into it.
5) Press to make chaklis into hot oil.
6) Deep fry till they get golden yellow.
7) Take out and let it cool.
8) Crush the chaklis into a mixie and grind to make fine powder.
9) In other pan, add sugar and water.
10) Boil well till the sugar syrup gets 1 string consistency.
11) Now add the chakli mixture into it and cook till gets thick.
12) Takeout the mixture to a plate. 
13) Smear your palms with oil, take a small amount of mixture and make small balls.
14) Delicious Bandaru Laddu / Tokkudu Laddu is ready now.

Know about the Recipe : 
We usually love to taste appetizers because they are hot, spicy and crunchy. So, today let's move ahead to make an Indian starter snack / appetizer GOBI-65 recipe. As Gobi is the best meat substitute, absorbs all flavours easily and it will not loose its shape even after cooking, I have taken this wonder vegetable in place of chicken and preparing Gobi-65.  

Gobi / cauliflower is one of the most versatile vegetables, contains an impressive array of nutrients, high level of vitamins and minerals. Because of its enormous health benefits, we can call it as super food, therefore do include this amazing vegetable in your diet regularly. It even reduces the cancer risk. 

I have added all ingredients to cauliflower, mixed well till all the mixture coats well with cauliflower florets and deep fried in oil. Giving the detailed recipe below and even posting the making video.

INGREDIENTS : 
200 grams Cauliflower / Gobi 
3/4 cup Maida
1/2 cup Besan
1 tsp Salt
1/2 tsp Red Chilly Powder
1/4 tsp Turmeric Powder
1/4 tsp Dhaniya Powder
1/4 tsp Garam Masala
1/2 tsp Ginger Garlic Paste
Coriander leaves
1/2 Lemon juice
Pinch of Food colour
Water
Oil to deep fry 

METHOD : 
1) In a bowl, take cauliflower florets.
2) Add maida, besan, salt, red chilly powder, turmeric powder, dhaniya powder, garam masala, ginger garlic paste, coriander leaves, lemon juice, a pinch of food colour.
3) Add water and mix well till all the mixture coats well with cauliflower florets.
4) Make a tight dough and keep aside.
5) Heat oil in a Pan.
6) Add the Gobi florets mixture to the oil.
7) Deep fry on low flame, till they become golden brown. 
8) Finally add few curry leaves, deep fry along with gobi.
9) Take out and serve.
