BANDARU LADDU / TOKKUDU LADDU

Know about the Recipe : 

Andhra is the mother land of many awesome delicacies. Typical Andhra cuisine has many special signature recipes for pickles, sweets, veg and non-veg curries. I have studied my Intermediate in A.P. Residential Junior College in Nimmakuru, Krishna district and stayed there for two years. So, I have tasted many of these wonderful dishes, but not tried to learn how to make them. I remember whenever we go home for holidays, we all used to buy the some authentic sweets from a famous sweet shop in Vijayawada bus stand. Happy to recollect all the beautiful memories. 

One of the most popular, traditional and delicious dessert from Andhra is Bandaru Laddu. It is also called as Tokkudu Laddu made with gramflour and the making process is entirely different from regular boondi laddu which brings a big difference in taste also.

When I participated in TV 9 Chef No.1 reality Cookery Contest, our Chef gave the task of making Bandaru Laddu in quarter finals. Only 4 contestants were in the game that time and only one of us was able to describe the right process of making bandaru laddu. I know the taste but don't know the making of it. Chef gave us the complete recipe, asked us follow and make at least 4 laddus that are identical in shape, should not go away from original flavour , colour and texture. For the first time in life, I tried doing them, finished with same taste, but missed the texture and colour. My laddus got crumbled when I presented them at Chef's table. My product was better than other 3 contestants, so moved on to Semi finals in that Contest. 

With this learning experience, today I am presenting and sharing the recipe of BANDARU LADDU with you all. I have made a tight dough with Besan (gram flour), made chaklis and deep fried them in oil till they get golden yellow. Later after cooling, I crushed the chaklis and ground to make a fine powder. This powder later cooked in Sugar Syrup. It smells delicious when cooking in sugar syrup. Made small balls with this mixture in desirable size. Delicious Bandaru Laddus got ready. Thanks to Chef Sudhakar No.Rao for making us to learn this wonderful recipe at TV9 Chef No.1 contest. This time my Bandaru Laddus successfully reached all  parameters told by Chef.

INGREDIENTS : 
1 cup Besan (Gram flour)
1 tsp Oil
Water to mix
3/4 cup Sugar
1/4 cup water

METHOD :
1) In a bowl, add besan and oil.
2) Add water, mix well and make tight dough. 
3) Take Chakli maker, choose perforated plate with a medium size holes. 
4) Now place the dough into it.
5) Press to make chaklis into hot oil.
6) Deep fry till they get golden yellow.
7) Take out and let it cool.
8) Crush the chaklis into a mixie and grind to make fine powder.
9) In other pan, add sugar and water.
10) Boil well till the sugar syrup gets 1 string consistency.
11) Now add the chakli mixture into it and cook till gets thick.
12) Takeout the mixture to a plate. 
13) Smear your palms with oil, take a small amount of mixture and make small balls.
14) Delicious Bandaru Laddu / Tokkudu Laddu is ready now.
