PAN FRIED TANDOORI CHICKEN

Since Moghul period Tandoori Chicken is the most popular and best chicken dish in Indian cuisine. Its an iconic traditional chicken recipe of North India prepared with chicken marinated in yoghurt and authentic Indian spices. Then traditionally cooked in a clay oven called Tandoor on high temperatures. It can be cooked on a barbecue grill also.

As it is not possible to have a Tandoor in our domestic kitchens, we regularly go to restaurants / dhabas to enjoy the awesome taste of Tandoori Chicken.  Because of my busy working schedules in my boutique, I do not find much time to go out and enjoy. This made me to find a new way to cook Tandoori Chicken at my home itself. I have used Pan to fry the Chicken pieces. So my dish became PAN FRIED TANDOORI CHICKEN. 

Let me share the recipe of Pan Fried Tandoori Chicken with you all today. I have taken 2 whole chicken thighs for marination. You can get Tandoor Cut Chicken thighs directly in any chicken shop or you can even put gashes (cuts) using a sharp knife. This allows the chicken pieces to absorb all the spices completely during marination. Added all masalas to hung curd, mixed well and applied to chicken and marinated for one hour. Then heated oil in a Pan, added these marinated chicken pieces. Need to remember that entire process of cooking must be done on low flame. Close the lid and cook for 7 minutes. Open the lid and turn to other side and cook for 7 minutes again closing the lid. Continue to cook till the chicken gets cooked. I have repeated this 4 times (2 times on each side). Usually while eating Tandoori Chicken we get a nice smoky flavour because it has been cooked in a Tandoor. I didn't want to miss this awesome smoky flavour in homemade Tandoori Chicken. So I have kept a small bowl in pan, added a burning coal to it. Added a spoon of oil to that burning coal and immediately closed the lid and let the smoke to form inside the pan.  With this, the chicken nicely absorbs the smoky flavour and PAN FRIED TANDOORI CHICKEN is ready to eat now...!

INGREDIENTS : 
2 Tandoor cut Chicken thighs
100 grams Hung Curd
1/2 tsp Turmeric powder
3/4 tsp Red chilly powder
3/4 tsp Salt
1/2 tsp Dhaniya powder
1 pinch Red colour
1/2 tsp Garam Masala
3/4 tsp Chat masala
1 tsp Kasuri methi
3/4 Ginger Garlic Paste
1 ladle oil
1 burning coal
1 tsp oil 

METHOD : 
1) In bowl, add hung curd.
2) Add turmeric powder, red chilly powder, salt, dhaniya powder, 1 pinch of red colour, garam masala, chat masala, kasuri methi, ginger garlic paste and mix well. 
3) Apply this mixture to tandoor cut chicken thighs. 
4) Marinate for at least one hour.
5) Add oil to Pan. 
6) Add marinated chicken pieces, close the lid and cook for 7 min.
7) Turn over and cook for 7 min. other side also closing the lid.
8) Repeat this 4 times (2 times each side) and see that all the chicken is cooked well.
9) Finally keep a small bowl in pan.
10) Keep a burning coal in the bowl. 
11) Pour a spoon of oil on burning coal and close the lid immediately.
12) Smoke forms inside and nicely blends with the chicken pieces.
13) Dish out and enjoy the taste of Pan fried Tandoori Chicken.
