PEANUTS CHIKKI

Friends...! If we go back to our childhood golden memories, we remember eating many healthy snacks made by grandmas, especially Chikki. Chikki is a traditional Indian Snack and hot favourite candy to all of us. We prepare various chikkis using sesame seeds, dry fruits and roasted chana dal. Most of our kids are now eating various candies, chocolates, cakes and so.. but chikki is the healthy snack / candy and we must make our kids to eat them instead of chocolates. It is very easy to prepare and low cost item that is easily available in all shops.

Today I am presenting PEANUTS CHIKKI, the same old grandma's recipe made with a combination of healthy ingredients like jaggery, peanuts and very little ghee. Thanks to our elders for making the habit of eating chikki as a timepass snack. Jaggery is highly rich in iron content, prevents anaemia, helps in digestion and purifies blood. And as we all know Peanuts are rich in all kinds of nutrients that provide us enormous health benefits. Try to take a small piece of jaggery after every meal. It is very good for our health. 

Coming to today's recipe, I have dry roasted peanuts till they get golden brown. After cooling, peeled out the skin and kept aside. Now taken jaggery and started melting it in a pan. No need of adding water. Cook on low flame, stir continuously till gets dark in colour and caramelize. When it becomes thick, add roasted peanuts to it. Mix well until all the jaggery coats well with peanuts. While mixing, the sweet aroma gives an awesome feeling. Later took a thick polythene cover, to avoid sticking of the peanuts mixture, applied little ghee on it. Closed it with another polythene cover by applying ghee again. Spread it nicely using the rolling pin. Taken off the cover, cut it with a sharp knife. Let it cool and serve.

INGREDIENTS : 
1 cup Peanuts
3/4 cup Jaggery

METHOD : 
1) In a pan add peanuts and dry roast well till they get golden brown.
2) Cool the peanuts and peel off the skin. 
3) Now, in other pan, add Jaggery, keep a low flame. 
4) Stir continuously and melt till it gets dark in colour.
5) Caramelize and let it thick.
6) Add roasted peanuts. Mix well and see that all jaggery mixture coated with peanuts.
7) Take a thick polythene cover and apply ghee on it. 
8) Place this mixture on it, close with another ghee applied polythene cover.
9) Spread evenly using rolling pin. 
10) Cut it when hot with a sharp knife.
11) Eat when gets cool.
