MANGO CHITRAANNAM (Mango Rice) - Rayalaseema Festival Special

Know about the Recipe : 
Rayalaseema, a region in Andhra Pradesh, is well known for the spiciest delicacies. The cuisine is very famous for unique flavours, hot & spicy tastes, fresh aromas and superb dishes. I am the native of Kurnool, a district in Rayalaseema region. As many villages in our district are very near to Karnataka, our culture is highly influenced by Karnataka and the recipes we prepare are the mixture of both regions. 

I would like to introduce some traditional and authentic Rayalaseema recipes we specially cook and serve as Naivedyam to God during festivals. These specials include Bhakshyalu, Chitraannam, Alugadda Vepudu (Aloo Fry) and Bhakshyala Charu (made with Boiled Chana Dal water). 

Let me start the feast with Chitraannam today. Chitraannam is a very famous dish in Rayalaseema and Karnataka, prepared during festivals. It is called as Nimmakaya Pulihora in Andhra and also called as Lemon Rice made using cooked rice, lemon juice which gives a superb sourness and awesome tangy flavour and peanuts give an additional taste to this colourful rice.

Today I am using Raw Mango for sourness and preparing MANGO CHITRAANNAM. Started the dish by sauteeing mustard seeds, jeera, urad dal, chana dal and peanuts in refined oil. When peanuts half fried, added long slit green chillies, mint leaves, curry leaves and coriander leaves. Mint leaves give a fresh and awesome aroma while sauteing. Finally added grated Raw Mango and saute little. When peanuts and other ingredients are fried well, added cooked rice and mixed well till all the mixture blends well with rice. My Mango Chitraannam got ready now.

INGREDIENTS : 
1 tbsp Raw Mango (grated)
1 cup Cooked Rice
1 ladle Oil
1/2 tsp Mustard Seeds
1/2 tsp Jeera
1/2 tsp Urad Dal
1 tsp Chana Dal
1/2 cup Peanuts
2 Green Chillies (long slit)
Mint Leaves
Curry Leaves
Coriander Leaves
1/2 tsp Salt
1/4 tsp Turmeric Powder

METHOD : 
1) Heat oil in a pan.
2) Add mustard seeds, jeera, urad dal and chana dal.
3) When sauteed, add peanuts and roast them.
4) When half roasted, add green chillies, mint leaves, curry leaves and coriander leaves.
5) Saute well and add salt to taste, little turmeric powder.
6) Finally add grated Raw Mango.
6) Mix well and add 1 cup cooked rice.
7) Mix well till all the ingredients nicely blend with rice.
8) Traditional, tasty, colourful Mango Chitraannam is ready to taste now.

Tips :
1) You can also prepare this using left over rice.
2) Replace Mango with Lemon juice for sourness and tangy flavour.
