KOSAMBARI / VADA PAPPU - Healthy South Indian Salad

Know about the Recipe : 
Kosambari is a typical Karnataka Style food and is a Udupi special dish. It is also called as Vada Pappu in Andhra. It is a healthy south Indian Salad made of soaked Moong dal seasoned with cucumber, fresh coconut and coriander leaves. In my home, we prepare this Kosambari as a upvaas special at the time of Shivaratri festival. We usually do fasting on this auspicious day. After visiting temple and doing puja in the evening, we eat Kosambari because this is a Saatwik food made without using onion and garlic. It keeps the stomach cool and full.

INGREDIENTS : 
1 cup Moon dal (soaked for 4 hours)
1/4 cup Cucumber - sliced
1/4 cup Fresh coconut - grated
Coriander leaves
Salt to taste

Tadka : 
1 tbsp Oil
1/4 tsp Mustard seeds
1/4 tsp Jeera
1 Green Chilly
1 Dry Red chilly
Curry leaves

METHOD : 
1) Soak Moong dal for 4 hours.
2) Take a bowl, add soaked moong dal.
3) Add sliced cucumber, grated fresh coconut and fresh coriander leaves.
4) Add little salt to taste and mix well.
5) Now prepare Tadka by adding mustard seeds, jeera, urad dal, green chilly, red chilly and curry leaves in hot oil.
6) Saute well and add this tadka to the above prepared Moong Dal mixture.
7) Mix well and taste it.
8) Enjoy cool, tasty, healthy Indian Salad "Kosambari / Vada Pappu".

VEG UPMA - Traditional, Healthy Indian Breakfast

UPMA is a very popular, healthy, traditional Indian Breakfast dish. We all prefer to cook Upma because it is very simple, easy, gets ready very fast and definitely we do not need any skill to prepare this tasty Upma. As this dish is in breakfast menu since our grandmother's time, usually many of us feel it boring. But upma made using broken wheat / semolina is really very good for health and is a preferred diet for diabetics as well. 

Today I have prepared a colourful, awesome, tasty "VEG UPMA" made using Bombay Rawa, cashew nuts, colourful vegetables. Added little lemon juice to bring a super taste to my Veg Upma. Please check the following ingredients list, step-by-step photos and watch recipe video. Try making this recipe little interesting with few additions like vegetables, cashew nuts and so.. Change the vegetables time to time, change regular semolina to bombay rawa, change the chutney.. like taste upma once with coconut chutney, next time with tomato chutney or gun powder or ginger chutney. Prepare and enjoy VEG UPMA today...!!!

INGREDIENTS :
1 ladle Oil
1/4 tsp Mustard Seeds
1/4 tsp Jeera
1/2 tsp Urad dal
1/2 tsp Chana dal
1/4 cup Cashew Nuts
1/2 cup Onion
2 Green Chillies
Curry Leaves
1/4 cup Carrot
1/4 cup French beans
1/4 cup Green peas
1/2 cup Tomato
Salt to taste
3 cups Water
1 cup Bombay Rawa
Coriander leaves
1 tsp Lemon juice

METHOD :
1) Take a pan and add oil.
2) When oil gets heated, add mustard seeds, jeera, urad dal, chana dal and saute.
3) Add cashew nuts and fry well.
4) Add onion, green chillies, curry leaves and saute.
5) Now add chopped carrot, french beans and green peas.
6) Add tomato, little salt, mix well and cook for 10 min. by covering the lid.
7) Add 3 cups of water and boil it well.
8) Now add Bombay rawa. Keep on mixing to avoid forming lumps.
9) Cook for 10 minutes again by covering the lid.
10) Finally add coriander leaves and a spoon lemon juice.
11) Mix well and dish out.
12) Serve hot.
13) Enjoy tasting "VEG UPMA" along with Ginger Chutney / coconut chutney / gun powder / tomato chutney.

UPMA PESARATTU / MLA PESARATTU - Andhra Special Breakfast

Upma Pesarattu is a special breakfast recipe in Andhra Region. Pesarattu is prepared using the soaked moong dal batter and Upma is prepared using semolina. Both are two separate breakfast dishes and eaten separately. But Upma Pesarattu is a winning combination and is most favourite dish in Andhra. It is also called as MLA Pesarattu because this super combination dish is served in a hotel that is located in MLA Quarters of Hyderabad. 

Let me share this delicious, special Andhra Breakfast recipe with you all. I am giving you the recipe of Pesarattu and using a pre-cooked Upma today to make this awesome dish. INGREDIENTS : 
1 cup Moongdal (soaked for 4 hours)
1/4 tsp Ginger Garlic Paste
Salt to taste
2 Green Chillies
Pinch Cooking Soda
1 cup Upma 

METHOD :
1) Soak Moong dal for 4 hours. 
2) Now add little ginger garlic paste, green chillies and salt to taste.
3) Grind to make batter like dosa batter.
4) Add a pinch of cooking soda, mix well. 
5) Heat tawa and add a ladle of batter.
6) Spread well and make pesarattu
7) Add little oil on top.
8) When it is cooked, add a cup of upma and spread on top.
9) Fold the pesarattu to half and fry well both sides.
10) Serve when hot. 

Note : 
1) You can also use whole moong dal to prepare pesarattu.

Since my childhood, I am crazy after this sweet, spicy and tangy Allam Pachadi.  Every Hotel and every andhra household serve Dosa / Idly along with this unique accompaniment.

I have already finished prepared Allam Pachadi.  So, cannot wait any more to taste this.. Now let me move on to have my breakfast with Idly and delicious allam pachadi. Get ready friends... you too try it out for sure today...! It takes just 10 minutes to prepare. This sweet, spicy, tangy Allam Pachadi tastes best with Dosa, idly and Pesarattu. Happy cooking...!!!

INGREDIENTS :
3 tbsp Oil
1/4 cup Ginger - sliced
Red chillies - 5
1/2 tsp Jeera
Little Tamarind
Salt to taste
1/4 cup Jaggery
Little water
Mustard seeds
Urad Dal
Chana Dal

METHOD :
1) Take a pan, add oil.
2) Add Ginger slices, red chillies, jeera and fry.
3) Add little tamarind and fry well.
4) Add this mixture to a mixie and grind to make paste.
5) Add little water and mix again.
6) Now start preparing Tadka.
7) Add little mustard seeds, jeera, urad dal and chana dal to hot oil.
8) Saute all the ingredients well.
9) Add curry leaves and mix once.
10) Add tadka to above ground Allam Pachadi.

11) Sweet, spicy and tangy Allam Pachadi is ready to taste now.
