UDUPI HOTEL SAMBAR - TRADITIONAL KARNATAKA STYLE

Udupi Hotel Sambar is very famous South Indian delicacy and Udupi restaurants are the icons of south Indian vegetarian cuisines across the globe. Since childhood I have been tasting this authentic dish in various Udupi Hotels in Telugu States, Karnataka, Tamilnadu and even in USA. The taste remains same. The secret behind this authentic flavour is its unique "Sambar Powder".

Udupi cuisine has a very special place in Karnataka cuisine that is treating all of us with its pure vegetarian dishes. Generally Udupi food is Sattvik, means they do not use onion and garlic in their recipes. Today I am presenting the actual style of Udupi Hotel Sambar that is served in Hotels / Restaurants. In hotels, the sambar is prepared with the awesome combination of Udupi style of Sambar powder, cooked in Madras style of sambar making. One more major difference is - in hotel sambar they use little jaggery for subtle sweetness whereas sambar onions are added in Madras style to bring mild sweetness to this authentic dish. And I have added brinjal, beans, carrot, green peas and tindora to the sambar. You can add any vegetables of your choice. 


For Sambar powder, we have used fresh coconut and roasted all the ingredients in oil. So, this specially made Udupi Sambar powder cannot be preserved for more time. Do prepare fresh sambar powder whenever needed. 


Udupi Hotel sambar tastes super with rice / idly / vada / dosa. Add little more jaggery when you wish to taste along with idly, vada or dosa.

INGREDIENTS : 

For making Sambar Powder : 
1 tsp Oil 
2 tsp Chana Dal
1 tsp Urad Dal
1 tsp Coriander Seeds
1/4 tsp Black Pepper
1/2 tsp Jeera
1/4 tsp Mustard Seeds
Fenugreek Seeds - few
Curry leaves
1 tsp Fresh coconut pieces
4 Dried Red Chillies
1/2 tsp Ginger - sliced

For making Sambar : 
1 cup boiled & mashed Toor Dal
3 tsp Oil
1/4 tsp Jeera
1/4 tsp Urad Dal
3/4 cup Onion
2 Green chillies
3/4 cup Tomatoes
1 cup Mixed Vegetables 
Salt to taste
1/4 tsp Turmeric powderr
1/4 cup Tamarind pulp
3 tsp Sambar powder
Curry leaves
Fenugreek leaves
Coriander leaves
1/4 tsp Red chilly powder
Little Jaggery
Little Ghee
Water 

METHOD : 
1) Take tawa and add a spoon oil.
2) Add chana dal, urad dal and roast till colour change.
3) Add coriander seeds, black pepper, jeera, mustard seeds, fenugreek seeds, few curry leaves, sliced ginger and roast well.
4) Add all the roasted ingredients to the mixie and grind to make Sambar Powder. 
5) Sambar Powder is ready now.
6) Take a bowl, add oil.
7) When oil gets heated, add mustard seeds, jeera and urad dal and saute.
8) Add red chilly and add onion, green chillies, tomatoes, a cup of mixed vegetables and mix well and saute.
9) Now add salt to taste, little turmeric powder, mix once.
10) Cover the lid and cook for 10 minutes.
11) Open the lid and add little water and cook again till all the vegetables cook well and get soft.
12) Add tamarind pulp and water. Mix once.
13) Now add a cup of cooked & mashed Toor dal, salt to taste.
14) Add sambar powder, curry leaves, fenugreek leaves, coriander leaves and add enough water. 
15) Add little red chilly powder, a small piece of Jaggery and cook for 5 minutes more by covering the lid. 
16) Finally add little ghee, mix well and dish out.
17) Delicious, authentic UDUPI HOTEL SAMBAR is ready to taste now.

DAHI VADA - Healthy Hyderabad Snack

Hyderabad is renowned for its authentic, tasty delicacies. One of the very famous delicious dish of Hyderabad is "Dahi Vada". This awesome Iftar snack is an all time favourite and all Muslim families prepare regularly during Ramadan month. As they perform fasting whole Eid month, Muslims prefer to have some food that is tasty, healthy and nutritious as well. These Dahi Vadas keeps the stomach filled and cool after breaking the fast. 

Today I am sharing an authentic, delicious Hyderabadi Dahi Vada recipe with you all. Dahi Vada is made with Vada prepared using Urad Dal, soaked in Dahi (yoghurt). North Indian version  is little bit different from this recipe because they tamarind & mint chutney and they even add chat masala.

I have already gave you the recipe of VADA in previous recipes list. So, today I am showing how to prepare Dahi Vada using ready made Vadas. Come.. lets enter my kitchen to know the ingredients list and preparation method along with step-by-step photos and recipe making video. Its very easy to prepare and gets ready in just 10 min. Try out today and prepare these nutritious, yummy, healthy and cool "DAHI VADA". 


INGREDIENTS : 
2 Vada
2 cups Curd
1/2 tsp Salt
1/4 tsp Sugar
1/4 roasted Jeera powder
1 tbsp Oil
1/4 Mustard seeds
Little Jeera
1/4 tsp Urad dal
1/2 Ginger
Coriander leaves
Curry leaves

METHOD : 
1) Take a bowl and add 2 cups of curd.
2) Add salt, sugar and little jeera powder.
3) Mix well and keep aside.
4) Curd Mixture is ready.
5) For prepare Tadka by adding mustard seeds, jeera, urad dal and sliced ginger, coriander leaves and curry leaves to hot oil. Saute them and keep aside.
6) Take Vadas prepared using Urad dal. 
7) Dip each vada in water to make it little soft. Squeeze water gently and add to the curd mixture.
8) Add Tadka to the Dahi Vada.
9) Mix well again.
10) Finally sprinkle little red chilly powder on top. 
11) Rest for some time and serve when all Vadas are nicely soaked in Dahi and get soft.
11) Delicious, cool Dahi Vada is ready to taste now.

JEEDIPAPPU PAKODI / KAJU PAKODA / CASHEW NUT FRITTERS - Crispy Evening Snack

Jeedi Pappu Pakodi / Kaju Pakoda is a rich, unique, tempting evening Snack that can be prepared very easily. I proudly say 'Yes', I am addicted to this crispy, nutty, mouthwatering snack. We usually feel to taste something yummy and hot on a rainy day / cool evening / chilling winter. Kaju Pakoda is the best choice because it can be made quickly with all available ingredients at home and in Hyderabad, Kaju Pakoda is a hot saleable item in all sweet & savory shops. 

With the name of Jeedi pappu Pakodi, I remember the golden days of my studies in Krishna district. After every holidays, whenever I return to college, my Anna (brother) used to buy them from very famous G. Pulla Reddy Sweets, Kurnool for me. And all my friends used to run after my bag to taste these yummy pakodis. 

Lets not waste the time any more... Enter my kitchen to learn this wonderful recipe now. The secret behind the crispiness of Pakodis is mixing the dough in stiff consistency. Onions release enough moisture and oil too makes the ingredients mixture moist, so add very little water while mixing. Mint leaves bring a great flavour and cashews add richness to the recipe. INGREDIENTS : 
2 cups Besan
1/4 cup Cashew Nuts
1/2 cup Onion julienne
2 Green Chillies
1/4 tsp Turmeric Powder
1/4 tsp Red Chilly Powder
Salt to taste
1/4 tsp Coriander Powder
1/4 tsp Garam Masala
1/4 tsp Ginger Garlic Paste
Curry Leaves
Mint Leaves
Coriander Leaves
3/4 ladle Oil
Oil for Deep fry
Little water

METHOD :  
1) In a bowl, add besan, onions julienne, long slit green chillies, coriander seeds, turmeric powder, red chilly powder, salt to taste.
2) Also add coriander powder, garam  masala, cashew nuts, curry leaves, mint leaves, coriander leaves, ginger garlic paste and a ladle oil. 
3) Mix well adding very little water. 
4) Make the dough with stiff consistency.
5) Heat oil for deep fry in a Kadai.
6) Take the dough and drop little making pakodis in oil. 
7) Stir constantly and deep fry pakodis till they turn golden brown and crispy.
8) Serve and taste when hot.

EGG BUTTER KAARAM DOSA - Breakfast Recipe

Dosa is a traditional and very popular breakfast in South India and it is a part of standard menu in every house hold.  We all have grown up tasting regular varieties of dosas like Butter Dosa, Masala Dosa, set dosa etc., etc., made by moms and in many hotels. My mom was preparting Dosa as breakfast, I have started giving it to my kids as an evening snack and presently dosa is a hot favourite food in midnight street food counters as well. 

These days lot of midnight  food counters are widely seen in Hyderabad streets, where they are serving some different and unusual combinations of dosas. I have surprised to see these variety dosas there and tried tasting a couple of them. Can't  find the real taste because they are too spicy and served very hot.  But I liked the idea of  trying different combinations to make variety of Dosas. It's good to see all Hyderabadi food lovers enjoying midnight food along with their buddies, families and kids. 

Inspired by Hyderabadi Midnight street food, today I am sharing a special style of Dosa with a typical combination of Egg and butter, spiced up with Kaaram paste made in Nellore style. 

Come on friends.. step into my kitchen to know the necessary ingredients and preparation method along with step-by-step photos and a recipe making video and prepare a quick, super tasty and spicy EGG BUTTER KAARAM DOSA. It tastes awesome with coconut chutney and tomato ketchup. Truely you all will love it...! Enjoy...! 


INGREDIENTS :

For making Kaaram :
½ Cup Onion
3 Red Chillies
2 Garlic Cloves
Salt to taste
1 tsp Dry Coconut pieces

For Dosa :
Dosa Batter (regular)
1 Egg
1 tsp Cooking Soda
2 tsp Oil
¼ tsp Butter
Coriander Leaves

METHOD :
1) In a mixie, add a cup of onion, red chillies, garlic cloves, dry coconut pieces and salt as per your taste.
2) Grind to make a paste called “Kaaram paste”
3) Now take Dosa batter and add little cooking soda and mix well.
4) Spread Dosa on tawa and add oil to it.
5) Now add a spoon of above made Kaaram paste and one egg.
6) Spread the mixture nicely on top of Dosa.
7) Add few coriander leaves and little butter.
8) Fry well on both sides.
9) Cut dosa vertically and roll the pieces.
10) Serve these dosa rolls along with coconut chutney / tomato ketchup.
11) Enjoy the taste of hot & spicy, special EGG BUTTER KAARAM DOSA now…!
