TOMATO GNOCCHI (Nyokkey) - HOME MADE ITALIAN PASTA

We all had a fun time at home this New year holidays. Enjoyed tasting many continental delicacies. My kids asked me why I am not preparing their favourite Italian Pasta at home. That's the good one my dear kids. Very next day, I have decided to make delicious pasta for my kids. Even though it was the first time I have prepared Pasta at home, it came out really well and my kids enjoyed the taste so much. Let me share the tasty, yummy, delicious dumplings TOMATO GNOCCHI recipe with you all today. Gnocchi is a type of Classic Italian Potato Pasta cooked in tomato. Gnocchi is pronouned as Nyokkey. 

First I have prepared the dough by mixing grated boiled potato and a spoon of all purpose flour. Kneaded this mixture well to form soft dough. Take a small amount of dough and make an oval shaped Gnocchi (pasta). Gently pressed on the top to make it little flat. Created ridges using fork. Now Gnocchi are ready to cook in salted boiling water. Cooked only for 2-4 minutes. Gently removed Gnocchi, drained all the water and cooled down. If they get soft, refrigerate them to make them firm. 

Next, in a pan, sauteed finely chopped garlic and onion in butter, added tomatoes, finely chopped red chillies, salt and little sugar. Cooked for 10 min. by covering the lid. Added mixed herbs powder and cooked till all the water gets evaporated. Then added boiled gnocchi and mixed well. Finally added finely chopped coriander leaves and dished out. Tasty Italian Tomato Gnocchi got ready to taste now.

INGREDIENTS : 
2 Boiled Potatoes
1.5 tsp Salt
1 tsp Butter
1 tsp Garlic - finely chopped
2 tsp Onion - finely chopped
1 cup Tomato
1 tsp Red Chillies - finely chopped
1/4 tsp Sugar
1 tsp Mixed Herbs Powder
Coriander leaves

METHOD : 
1) In a bowl, grate boiled potatoes.
2) Add all purpose flour and knead well to make soft dough.
3) Make small pieces and make oval shaped Gnocchi.
4) Gently press on top to flat it and create ridges using fork.
5) Boil water in a pan by adding little salt.
6) Added above made Gnocchi and cook for 2-4 min.
7) Gently remove, drain all the water and cool down.
8) In other pan, add little butter.
9) Add finely chopped garlic and onion and saute.
10) Now add tomatoes.
11) Add finely chopped red chillies, salt and little sugar.
12) Cover the lid and cook for 10 min.
13) Cook till all water gets evaporated.
14) Add mixed herbs powder.
15) Add cooked Gnocchi and mix well. 
16) See that all the tomato mixture nicely coated with gnocchi.
17) Finally add finely chopped coriander leaves. Mix again and dish out.
18) Serve hot.
