MYSORE BONDA / MYSORE BAJJI

Our Hyderabadis are food lovers. If you want to see how the day starts in Hyderabad, wake up little early in the morning, take a round of Hyderabad streets, you will find lot of people standing at the street food centers enjoying the taste of mouthwatering South Indian treats. Not only here, but in all hotels, Mysore Bonda is one of the hot sale and must item in the menu list, competing with Idly and Dosa.  

Mysore Bonda is a typical, traditional and delicious South Indian Snack originated from Mysore, Karnataka. It is also very famous in Andhra and Telangana called as Mysore Bajji.  

Preparing Mysore Bonda is quite simple and easy. Make a batter with Maida adding curd, salt and cooking soda. Fine chop onion, green chillies, coriander leaves, curry leaves and add to the batter along with jeera. Mix well to make thick batter. Now wet your palm, take a small amount of batter and drop in hot oil to make bondas. Deep fry them on low flame till they turn golden colour.  It looks crunchy outside and soft inside. Serve hot along with coconut chutney / ginger chutney. Tomato ketchup also accompanies good with Mysore Bonda.

INGREDIENTS : 
1 cup Maida
1/4 tsp Salt
1 Pinch Cooking Soda
3/4 cup Curd
Water
1/4 tsp Jeera
1 tsp Onion - finely chopped
1 tsp Green Chillies - finely chopped
Curry leaves - finely chopped
Coriander leaves - finely chopped 

METHOD : 
1) In a bowl, take a cup of Maida.
2) Add salt to taste, pinch of soda and add curd.
3) Mix well adding water.
4) Now add jeera, curry leaves, green chillies, coriander leaves and onion.
5) Mix well to make thick batter.
6) Heat oil in a Pan.
7) Wet your hands and take a small amount of batter and drop to the oil to make bondas.
8) Put low flame and deep fry all the bondas till they turn golden colour.
9) Take out and serve hot.
10) Enjoy the taste of MYSORE BONDA.

Know about the Recipe : Jowar is one of the most ancient grain, gluten free, high protein, cholesterol free and its a power house of all nutrients. Its been in use in since ages, but now growing importance for its nutritional  and health benefits. Best health food for weight loss and diabetes. 

In our Rayalaseema region, becaue of less rain fall and drought conditions, farmers prefer to choose the crops that produce good yield with limited water supply. So grains like jowar, bajra, finger millets (ragulu) are widely seen in our area. And the Rayalaseema cuisine also include various dishes made with these grains. 

Today I am sharing our Rayalaseema area's very famous and regular breakfast recipe JONNA ROTTE / JOWAR KI ROTI. Everybody think that it is difficult to make, but with little practice, you can all make it very easily. Use hot water to knead the dough, this will keep the dough sticky and will not break while making roti. When you fry it on Tawa, to maintain the temperature balance, I have dipped a cloth in water and tapped over the top of roti. Fry well on both sides, healthy Jonna Rotte will be ready to eat. Jonna Rotte is the good combination for all veg and non-veg curries, Garlic chutney powder.

INGREDIENTS : 
1cup Jowar Atta
Pinch of Salt
Hot water

METHOD :
1) In a bowl, take a cup of jowar atta, add little salt.
2) Add hot water and mix well to make dough.
3) Before making roti, knead well again by adding little water. Make it very soft.








 4) Sprinkle the atta. 
5) Take the dough and tap with two hands and make a roti. 



6) Place it on Tawa. 
7) Dip a soft cloth in water, tap on top of roti. 
8) Fry well on both sides.






9) Jowar ki roti / Jonna Rotte is ready to eat now.

TOASTED VEG SANDWICH

I am a Fashion Designer by profession. After hectic day's work in my boutique, get tired a lot and sometimes will not be able to wake up early. Then starts a real tough time in Kitchen. One side I get late to work and other side, I have to keep my kid's lunch box ready. In such situations, I try to cook something that is easy, healthy and save my time. One of such super quick recipe is TOASTED VEG SANDWICH.

Let me tell you the making of this recipe now. I have used carrot, cabbage and capsicum and sauted them well. Sauteing maintains the veggies' firmness, natural colour and nutritional values as well. I  am little health n calorie conscious, so always prefer to use refined oil instead of butter and ghee. So here too I used oil to spread on the bread slice and spread the sauteed veggies between the bread slices and toasted them in a sandwich maker.

INGREDIENTS : 
4 Bread Slices
1 spoon Oil
1/2 spoon Garlic - finely chopped
1 Onion - Small
1/4 cup Carrot - grated
1/2 cup Cabbage 
1/2 cup Capsicum
1/2 spoon Soya Sauce
1/2 spoon Vinegar
Little Red Chilly Powder 
3/4 spoon Tomato Ketchup
Coriander leaves
Salt to taste 

METHOD : 
1) Heat oil in pan. 
2) Add finely chopped garlic and onion. 
3) Add grated carrot, cabbage, capsicum and mix well. 




4) Now add salt to taste, soya sauce, vinegar, red chilly powder. 




5) Finally add tomato ketchup. Mix all the ingredients.
6) Saute well and take out to a bowl.




7) Take 4 bread slices. 
8) Spread oil on each bread slice.
9) Spread sauteed veggies on top. Sprinkle coriander leaves.
10) Close with other bread slice.





11) Preheat the sandwich maker. 
12) Place the breads on it.
13) Keep for 5 minutes.
14) Take out and cut each toasted sandwich into half. 
15) Enjoy the taste of TOASTED VEG. SANDWICH.






Tips : 
1) You can use butter or ghee instead of oil.
2) Use the veggies of your choice.

KADAI CHICKEN - North Indian Recipe in Restaurant Style

Kadai Chicken is a traditional North Indian Curry recipe and is a very popular dish usually served in Restaurants. During my stay in USA, I have got a chance to spend some time in a freinds' restaurant kitchen, talk to the Chefs and learnt some beautiful restaurant cooking style with them like making special masalas, special gravies and much more. I got to taste this Kadai Chicken there, specially made for me and enjoyed it a lot. There itself I got to know that the name Kadai Chicken is just because this chicken recipe is made using Kadai. That's nice to know.. isn't it???

Today let me share this KADAI CHICKEN recipe in Restaurant style that can be prepared very easily. I have prepared two masalas today. One is a special Kadai Chicken masala powder made with Coriander seeds, jeera, fennel seeds and black pepper. Dry roasted these whole spices and grind to powder. This masala gives a unique flavour, aroma and taste to the dish.  And the second one is a masala paste by frying onion and tomato, used for making the gravy. Taste enhanced by using chicken with bones and capsicum. As I have used onions twice, this recipe is more of onion flavour. Fresh cream gives a rich and creamy texture to the gravy. 

I am sharing the recipe with detailed photos & video also. Its simple, very easy to make and the best restaurant style dish. So, friends... no restaurant this Sunday.. follow the recipe, do it at home for your loved ones. Enjoy the taste of authentic, delicious, traditional North Indian "Kadai Chicken". Best combination for all naan, roti and rice varieties. 

INGREDIENTS : 
For Kadai Chicken Masala Powder :
1 spoon Coriander Seeds
1/2 spoon Jeera
1/2 spoon Fennel seeds
1/2 spoon Black Pepper

For Masala paste : 
1 ladle spoon Oil
3/4 cup Onions
1/2 cup Tomatoes

For Curry : 
1 ladle spoon Oil
1/2 cup Onions - diced
1/2 cup Capsicum - diced
1 spoon Salt
1/4 spoon Turmeric Powder
1/2 spoon Ginger Garlic Paste
spoon Red Chilly Powder
1/2 spoon Garam Masala
spoon Fresh Cream
Water - as required for gravy
Coriander leaves

METHOD : 
1) In a Pan, dry roast coriander seeds, jeera, fennel seeds and black pepper. 
2) Grind to make Kadai Chicken Masala Powder.



3) In a Kadai, heat Oil and add onions and tomatoes. Fry for 5 minutes. 
4) Grind to make masala paste used for gravy.



5) In Kadai, add oil.
6) Add chicken with bones and fry in oil for 5 minutes. 



7) Add diced onion, diced capsicum, salt to taste and turmeric powder. 
8) Mix well and cook for 5 minutes.




9) Add above ground masala paste, ginger garlic paste, red chilly powder, garam masala and Kadai chicken masala powder.
10) Add water, mix well. Cook for 15 minutes closing the lid. 






11) Finally add fresh cream, coriander leaves. Mix well and cook for 5 more minutes. 




12) Dish out and serve hot and enjoy the taste of Kadai Chicken curry.
