Know about the Recipe :
We often feel to find some interesting food in our lunch box. So I am presenting an Indo-Chinese "CARROT SWEET CORN FRIED RICE" for you today.
Fried rice comes in many styles and can be altered as per your taste. If you add Soya sauce, it will become Chinese and if only Vinegar is added, it becomes Indian. I am using both in the recipe. So, this fried rice is an Indo-Chinese Recipe now.
INGREDIENTS :
2 cups Rice
1/2 cup Carrots - finely chopped
1 cup par boiled Sweet corn
1 Big spoon oil
1/4 cup onion
1 spoon chopped Garlic
1/2 spoon Red Chilly Powder
1 spoon Vinegar
1 spoon Soya Sauce
1/4 spoon Sugar
1/2 spoon Pepper powder
Coriander leaves
Salt to taste
METHOD :
1) Cook all ingredients on high flame only.
2) Heat oil in a Pan and add onion and finely chopped garlic. Saute till they smell good.
3) Add carrot, par boiled sweet corn. Mix well and saute.
4) Add salt, chilly powder, vinegar, soya sauce and sugar.
5) Mix again.
6) Now add cooked rice and freshly ground pepper powder and mix well.
7) Finally sprinkle Coriander leaves on top and serve hot.

You can use all your favourite veggies like capsicum, carrot, beans etc., But I am using only carrots and sweet corns. Carrots give a colourful look and sweet corns lend a unique sweet aroma to the rice. Great flavour will be added to the rice if freshly ground pepper powder is used.
As it is very quick to make, cook this recipe on high flame only. Carrot Sweet Corn Fried rice best suits with Tomato ketchup.

Tips :
1) Cool the cooked rice completely and use because it spreads and mixes easily.
