METHI KAJU CHICKEN FRY

Chicken is the most widely used, easy to cook meat and is rich in proteins. We can prepare countless number of tasty dishes using chicken.

Today let me share a Chicken Appetizer recipe "Methi Kaju Chicken Fry" with you. This chicken dry dish can be served as an appetizer or a side dish or exotic entry to entertain your family members or guests at a party / lunch / dinner. It can be eaten directly and also tastes good with Roti. 

I have used Kaju / cashew nuts which gives a rich taste and added fresh methi leaves that gives a different flavour to the dish. Do not add water because it is a dry dish. Chicken will cook in its own moisture and also cooks well along with tomatoes.

INGREDIENTS : 
200 gms Chicken
1 big spoon Oil
3/4 cup Onion
1 spoon finely chopped Garlic
3 Green Chillies
1/4 spoon Turmeric Powder
1/2 spoon Ginger Garlic paste
Few curry leaves
1/4 cup Cashew nuts / Kaju
1/2 cup Tomatoes
3/4 spoon Red Chilly Powder
3/4 spoon Dhaniya powder
1 cup Fresh Methi leaves
1 spoon Lemon juice
Salt to taste

METHOD : 
1) In a pan, add a big spoon Oil. 
2) When oil gets heated, add onion, garlic, green chillies and saute.
3) Add Chicken, Turmeric powder, salt, ginger garlic paste and curry leaves.
4) Mix well and cook for 10 minutes closing the lid.
5) Add tomatoes, mix well and cook for 5 more minutes closing the lid.
6) Now add Kaju / Cashew nuts, salt to taste, red chilly powder, dhaniya powder and mix well.
7) Add fresh methi leaves, lemon juice and cook till it gets dry.
8) Dish out and serve hot.
