Today let me move away from my native recipes and step into North India and share MOTICHOOR LADDU recipe with you all. In South India, Boondi Laddu and Bandaru Laddu / Tokkudu Laddu (in Andhra Pradesh) are very famous and in North India Motichoor Laddu is most famous traditional recipe for festivals, weddings and happy occasions. Even though common ingredients like besan, sugar syrup are used to make all varieties of laddus, the making process is different to each, so taste varies automatically.      

I am presenting a detailed recipe of Motichoor Laddu here. We have to use a perforated skimmer with very small holes to make motichoor boondi. But because of non availability, I used the regular perforated skimmer and crushed the boondi just once in a mixie. Deep fry the boondi till it get crisp to get soft & crunchy texture.   Sugar syrup for regular laddus must get strings, but here we need a light sugar syrup.

INGREDIENTS :
1 cup Besan
1 spoon Bombay Rawa
1/2 cup Sugar
2 pinches Food Colour (Kesar)
1spoon Melon seeds
1/4 spoon Ilaichi Powder
Water as required
Oil for deep fry

MEHOD : 
1) In a bowl, add besan, bombay rawa, a pinch of saffron food colour.
2) Add water and mix well to get pouring consistency.
3) Take a perforated skimmer with very small holes to make motichoor boondi.
4) Deep fry till crisp.
5) Take out the deep fried boondi and add in a mixie.
6) Crush just once.
7) Take a pan and dry roast melon seeds and keep them aside.
8) Now add sugar, little water,a pinch of saffron food colour and ilaichi powder.
9) Mix well and make a soft sugar syrup.
10) Add boondi, roasted melon seeds and start cooking again.
11) Cook till the mixture gets thick.
12) Take out to a bowl, make beautiful laddus.
13) Enjoy the taste of North Indian traditional "Motichoor Laddus".
